Roasted Potatoes Bites with Balsamic & Feta Dressing

Welcome back to the All Things Southern kitchen. I’m excited about sharing this week’s recipe with y’all. My Roasted Potatoes Bites with Balsamic and Feta Dressing will ramp up the flavor on the regular old potato dish. Let me walk you through this.

“Roasted Potatoes Bites with a Balsamic and Feta Dressing”

3 lbs of potatoes

1 clove crushed garlic

1/4 cup olive oil

1/2 cup balsamic vinegar

3/4 cup water

Juice of one lemon

1 teaspoon Cajun seasoning

Salt and Pepper to taste

4 ounces Feta cheese crumbles

I’ve washed about three pounds of potatoes and cut them into nice big bite-size pieces and my oven is preheating at 450. Let’s prepare the dressing for these babies.

I’m using russet potatoes because they’re your best bet for baking, but you could use whatever potatoes you have on hand if they’re sprouting eyes. We’ll take a large bowl and stir together 1/4 cup of olive oil, 3/4 cup of water, the juice of one lemon and a clove of minced garlic. General rule, folks: I use about a clove of garlic for every pound of potatoes. Gotcha. We’ll season this dressing with a heaping teaspoon of Cajun seasoning and salt and pepper it to taste.

Now, we’ll place those potatoes in a 9 x 13 casserole dish that we’ve prepared with cooking spray and pour our dressing over the top. Toss well. Cook ’em for thirty to forty minutes, (the time will vary depending on how many potatoes you have).

Remove, stir, add a little more water if the liquid has cooked out and bake ’em another thirty to forty minutes or until they’re fork tender.

When we’re ready to serve these babies, we’ll toss them with our Feta cheese crumbles. They’re spicy, they’re tangy, and they’re delicious! Enjoy my Roasted Potatoes Bites with a Balsamic and Feta Dressing. It’s good eating from the All Things Southern kitchen to yours~

    These potatoes sound really good but myself and hubby couldn’t eat that many potatoes. Is it possible to half the recipe.
