Shellie’s Home-Style Scalloped Potatoes

Hello folks and welcome back to the All Things Southern kitchen. Today is all about comfort food. I’m making my Home-Style Scalloped Potatoes and I’m eager to share the recipe with y’all. I was trying to decide what to do for supper the other evening and it occurred to me that it was past time for scalloped potatoes. I’ll show you how to stir them up!

“Home-Style Scalloped Potatoes”

2 pounds of potatoes thinly sliced

1/2 onion

3/4 to 1 cup heavy cream

salt and pepper to taste

1 cup grated cheddar cheese

Green onions

We’ll begin by washing and slicing a couple pounds of potatoes.  I like to leave the skins on.  I’m going to be peeling and slicing a big yellow onion, too, and I’ll slice it and the potatoes as thinly as possible.

Once we have these prepared, we’ll take a casserole dish and layer half of our potatoes with half of our onions, sprinkle with salt, pepper, scatter a few pats of butter and half of our grated cheddar cheese. Repeat.

When we’re done we’ll pour heavy whipping cream over the top of everything. This isn’t exactly a diet dish. Just keep telling your self moderation. That’s the key.

Once we’ve topped our layers with cheese we’ll cover our dish with foil and bake it for 40-50 minutes at 350 or until the potatoes are fork tender. Then we’ll remove the foil and let the top brown.
