Heavenly Chocolate Cake for Valentines Day!

Hello folks! Welcome back to the All Things Southern kitchen. I was thinking we would whip up a dessert today. How about y’all? Were you thinking chocolate? Me, too! And marshmallows? Me, too! And Coffee mate creamer? GOTCHA! That’s another one of my little tricks. Let me walk y’all through my Heavenly Chocolate Cake.

“Heavenly Chocolate Cake”

4 eggs

2 cups sugar

2 sticks butter, melted

4 tablespoons cocoa

1 and ½ cup self-rising flour

2 tsp. vanilla

2 cups chopped pecans (optional)

 

Second layer: 2 cups small marshmallows

Icing:

1 box powdered sugar

4 tablespoons cocoa

½ stick butter, melted

½ cup Coffeemate vanilla creamer

 

We’ll begin by creaming four eggs with two cups of sugar. Then we’ll stir in 2 sticks melted butter, one and half cups flour, four tablespoons cocoa and 2 tsp. vanilla. Mix and pour into a greased 9×13 baking dish. We’ll cook this for about 25 minutes at 350. Then we’ll layer two cups of small marshmallows across the top and slide it back into the oven until they begin to melt. Remove and spread the marshmallows across the top. It doesn’t have to be perfect, or pretty. We’re about to cover it up!

On to the icing…We’ll mix a box of powdered sugar with four tablespoons cocoa and a half stick of melted butter. Now, this is where I took about a half cup of Coffeemate vanilla creamer and use it like milk to beat with the icing until you get a smooth consistency. A belle could get really creative here with all the different flavors of Coffeemate available. Like, I don’t know — caramel? YUM! Zap this icing in the microwave about thirty to forty-five seconds, pour it over the cake and smooth it with a spatula. Enjoy my Heavenly Chocolate Cake, y’all!
