Cheesy Green Beans

Hello folks and welcome back to the All Things Southern kitchen. I’m gonna show y’all how to stir up a delicious green bean casserole without a single can of cream of mushroom soup! We’re making history here folks. Step back. My version is called “Cheesy Green Beans” and it’s got tons more flavor than the old standard. Ready? Let’s get cooking!

  • 1 stick unsalted butter
  • 1 large onion – chopped
  • 1/4 cup flour
  • 1 and 1/2 cups milk
  • 3 cups grated Cheddar Cheese
  • Dash of hot sauce
  • 2 teaspoons soy sauce
  • 3 (14.5 ounce) cans of Green beans – drained
  • 4 ounces canned sliced mushrooms
  • 1 (8-ounce) can sliced water chestnuts – drained
  • 1/2 cup chopped almonds
  • Salt and pepper to taste

I’ve gotten us started by sautéing a chopped up white onion in a stick of unsalted butter. Now, I’m gonna slowly stir in a fourth cup of flour, two teaspoons of soy sauce, a cup and a half of milk and three cups grated cheddar cheese. Of course, it needs a kick and I’ve got just the thing—my All Things Southern hot sauce. I think a shake or two will do it. And if you aren’t so fortunate to have ATS hot sauce handy? Well, you can substitute. There are a couple other brands out there. 🙂

Now, we’ll pour this mixture into a baking dish and fold in our green beans, sliced mushrooms and water chestnuts. Salt and pepper to taste and top with a half cup of chopped almonds. That’s it! We did it—without a single can of soup. Bake my Cheesy Green Beans for thirty minutes in a 350 degree oven and enjoy… That’s good cooking from my kitchen to yours!
