Aunt Judy’s Caramel Candy

Hello folks, welcome back to the All Things Southern kitchen. Today’s recipe comes from one of the Golden Girls I mentioned in the porch chat. It’s “Aunt Judy’s Caramel Candy” and it comes with a promise and a warning. Let’s get the warning over with first. This recipe is full of sugar and high in calories. You’ll want to serve it in very small squares. And the good news?  It’s worth every bite! Come on, folks, I’ll show you the ropes.

Ingredients:

20 Oreos crushed

1/3 cup, ½ cup, and 3 tablespoons butter

1 (14 ounce) package Caramels

3 cups pecan halves

¾ cup semisweet chocolate chips

3 tablespoons heavy whipping cream

3 tablespoons light corn syrup

¾ teaspoon vanilla extract

We’ve got three layers, folks. Step One: Crush twenty Oreos into fine crumbs. Melt over a medium heat with one-third cup of butter and spread in the bottom and sides of a 9×12 baking dish. Bake at 325 for 12-15 minutes. Time may vary based on your oven. You don’t want to overcook it, but neither do you want it mushy. Let it cool completely.

Step Two: Heat a fourteen ounce package of caramels and ½ cup butter in the microwave until the s are melted. Stir in three cups of pecan halves and pour mixture over cookie crust base.

Step Three: For the topping, we’ll combine ¾ bag of chocolate chips, 3 tablespoons each of butter, heavy cream, and light corn syrup. Heat this in the microwave until its smooth. Stir in ¾ teaspoon vanilla extract and pour over the caramel layer. Once it’s cooled, cut it into small squares, very small squares, and enjoy!
